One element of Easton’s popularity is Sunflowers & Greens, a gourmet salad bar at 11 Federal Street. Its chef prepares a new menu each day from fresh produce from local farms, often choosing organic ingredients.
On a typical day, salads range from Asian tuna to poached pear, an offering made from baby greens, roasted cashews or pecans, arugula, and bean sprouts. Completing the salads are such dressings as tahini, honey balsamic vinaigrette, ranch, and winter herb oil. Alternately, diners can design their own salads from a range of quality ingredients.
They can round out their choices with protein-based selections such as gulf shrimp, prime beef tenderloin, ahi tuna, and free-range chicken. Popular side orders are West African bacon and mushroom and bacon soups.
Diners can finish with desserts such as peanut butter cookies and brown butter cakes, complemented by beverages such as La Colombe coffee and Numi iced tea.
